Plain Promise Winner and A Recipe!

First of all, in response to Amy's blog post - I also played the clarinet and would love to learn to play piano!

I want to share a recipe with you.  It has nothing to do with the Amish - just a recipe that I tried last night and really liked.  This pork tenderloin came out SO tender - easily cut with a fork.  And I think what I liked most was the way my house smelled while it was cooking.  I found the recipe online and took a chance.  Glad I did. 

Easy Marinated Pork Tenderloin

1/4 cup olive oil
1/4 cup soy sauce
1 clove garlic, minced
3 tablespoons Dijon honey mustard
salt and pepper to taste
1 (2 pound) boneless pork loin roast

Whisk together the olive oil, soy sauce, garlic, mustard, salt, and pepper in a bowl.  Place the pork loin in a large sealable plastic bag and pour in the marinade.  Marinate in the refrigerator for at least 1 hour before cooking.

Preheat oven to 350 degrees.

Transfer the pork loin to a baking dish; pour marinade over the pork.

Cook in the preheated oven until the pork is no longer pink in the center, 45 to 60 minutes. 

NOTE - I just realized as I'm typing this that I used regular Dijon mustard, instead of honey mustard.  It was still good, but I bet it would have been even better with the Dijon honey mustard!  Also I used a 2 lb. pork loin, doubled the marinade ingredients and cooked for 2 hours.  If you don't have garlic cloves - 1/2 tspn. minced garlic equals one garlic clove.
