Texas Praline Cake...Oh My!
Wow! The gifts are ripped open, the parties are over, and it's back to work for most of us...at least until New Year's Eve...LOL. Hope everyone had a blessed Christmas!
I'm going to share a wonderful recipe with you. A couple of weeks ago, I was a guest at a local country club. I signed books, and the chef prepared a fabulous feast. One of the things he served was Texas Praline Cake -- truly one of the best cakes I have ever had. He was gracious enough to provide attendees with the recipe.
Now, before I give it to you...I must say...I was SUPPOSED to make Snitz Pie instead! In each of my books, there are Amish recipes in the back, and I test each recipe before the book goes to print. Snitz Pie, an Amish favorite, will be featured in my next book. Well, I don't know how it is in other places, but here in Texas...no one seems to know what 'Snitz' is. I've come to find out that it's dried apples, which apparently is not stocked in my local grocery stores. HELP! The first person who responds with an offer to send me 3 cups of dried snitz, there's a free book in it for you!! (My editor is probably shaking her head...LOL)
Now, here is the recipe for Texas Praline Cake! I'm happy to share this one. Super yummy!
Texas Praline Cake
Cook the following for 6 minutes and cool:
1 1/2 cups boiling water
1 cup rolled oats
Mix together separately:
1 cup sugar
1 cup packed brown sugar
1 cup vegetable oil
2 eggs
Mix together separately:
1 1/3 cup flour
1 tsp. baking powder
1 tsp. cinnamon
1/4 tsp. salt
Add cool oats to sugar mixture and mix for 3 minutes on medium speed.
Then add flour mixture to that and mix until incorporated.
Using a spring form pan, bake at 350 until toothpick comes out clean, about 45 minutes.
While cake is baking, cook the following until all sugar is dissolved:
1/2 cup (1 stick) butter
1 Tblsp. milk
1 cup packed brown sugar
1 cup chopped pecans
Pour pecan topping over hot cake, then allow to cool.
Enjoy, and have a great week! Happy New Year's!

I just happen to have three bags of snitz (dried apples) in my pantry which I bought this fall when I was in Lancaster. I would be pleased to send three cups to you. Let me know where to send them.

Washington, IN in only 1 hour away from me. There lives and Amish community there, with all the stores etc. I will be happy to access you to 3 cups of snitz(dried apples) from one of their sources.

You are going to end up with tons of dried apples. I had never hear of snitz pie before so goggle it and found indeed it is dried apples and if you still want I am sure I could find some for your.

Thanks so much for the offer, but actually someone responded before you, and they are sending me some snitz they got from Lancaster County!

Well, ladies, it looks like both of you beat me to the draw... I am sure that we have dried snitz (dried apples) in our grocery store's. Also, I have access to a Health Food Store and they also carry them... I am also about 30 minutes away from an Amish Bulk Food Store and I'm sure they have them there... Are you near or have access to a Health Food Store? If so, you may be able to get them (dries snitz) dried apples ) there... God Bless ypu and Have A Blessed Happy New Year..

I wish I had some dried apples for you but I don't, but your cake recipe sounds wonderful, I will definitely make it, if it is as good as the other recipe I got from you it is a winner I made 4 batches of Raisin Puffs for Christmas, and they do freeze very well, but they were not in the freezer very long, my husband just loves them ;~)
