Recipe Time: Kauffman Amish Bakery Fruit Cake

Hi Everyone!

This week I'm going to share the recipe for the Kauffman Amish Bakery Fruit Cake, which is included in the back of my new book, A Plain & Simple Christmas.  Enjoy!

Kauffman Amish Bakery Fruit Cake

1 ½ cups sugar

2 eggs

2 cups applesauce or 2 cups fruit (any kind)

½ cup oil

2 cups flour

1/4 tsp salt

2 tsp baking soda

Mix together all ingredients and pour into a greased 9x13 pan. Bake at 350 degrees for 45 minutes

Icing

1 stick butter

½ cup evaporated milk

¾ cup brown sugar

1 tsp vanilla

Stir together in saucepan. Boil 5 minutes. Cool cake and cover with icing.

      Thanks for your comment!  I used mixed dried fruit in a little pouch.  The brand is Mariani, and I found it in the same aisle as the raisons in Walmart.  Enjoy!!!
