Oatmeal Pie

I've decided that the Amish can make pie out of anything. Here's a recipe for Oatmeal Pie. Sounds like it would be delicious, especially when the weather is cooler. This kind of reminds me of a pecan pie recipe. 

Oatmeal Pie

two well beaten eggs

three-quarter cup Karo syrup

three-quarter cup oatmeal

2 tablespoons water

2 tablespoons butter

1/2 cup coconut

Mix ingredients together, and put into an unbaked pie crust. Bake 40 min. (Note: 350 degrees, I'm assuming. The oven temp wasn't in the recipe. I would check other pie recipes and adjust the temperature accordingly.)
