Whoopie Pies
This past Saturday I held a book signing in my hometown to benefit Thyroid Cancer Research. In a total coincidence, my booth was next to a local Amish couple who sell their baked goods at local flea markets, get-togethers, celebrations, etc. So of course I bought whoopie pies. And a pumpkin roll. Talk about yummy. Here's a recipe for Whoopie Pies, for those of you who want to try to make this amazing Amish treat (from A Taste of Home: Schlabach Family Recipes):
1 1/2 cups shortening Filling: 3 egg whites
3 cups sugar 3 tsp vanilla
3 tsp soda 1 1/2 cups crisco
1 1/2 cups buttermilk 5 T milk
1 1/2 cups hot water 3 cups powdered sugar
3 eggs
3/4 cup cocoa
3 tsp vanilla
3 tsp salt
6 cups flour
Beat egg whites stiff. Mix in milk, powdered sugar, and vanilla. Add Crisco and cream together. Put filling between 2 baked cookies like a sandwich.
Me: seriously, this is the recipe as written. I have no idea why the instructions for the cookies weren't included. The cookie batter is like a cake batter, so you cream the sugar and shortening, add the liquids, then the eggs, mix the flour, soda, salt, and cocoa together and add it to the rest of the mixture, and beat until smooth. Drop by large tablespoons onto a greased cookie sheet. Bake at 350 degrees for 10 to 15 minutes.

Really? It's the first Amish cookbook I bought, and I got it in Holmes back in '95. I love it, even if I do have to fill in the blanks sometimes.
